Let them eat (honey) cake

With no actual beekeeping happening at this time of year apart from syringing my bees with oxalic acid a week ago (yes, non beekeepers that's not a typo) and then placing a slab of fondant (yes, that's christmas cake icing) on top of the frames, there has not been much else to do. So, I've been reading some beekeeping books and catching up with recent issues of BeeCraft and the BBKA's member magazine.

In fact, whilst reading the December issue of BeeCraft a couple of weeks ago I spotted a news piece with the above photo of an amazing honeycomb cake. A lady beekeeper had won numerous honey cake contests with a 'tear and share' cake pan she'd bought from Lakeland. As I'm rather partial to baking, I just knew that the cake tin had to be mine. This was further confirmed when I went onto Lakeland's website and found it was on sale. Yay!

Having arrived last week, yesterday I decided to try out the recipe that the pan comes with – a lemon cake with honey glaze. It was a huge success (even if I may say so) and not one of the hexagons are left. I've a feeling that honeycomb cake may become my signature dish and I'm keen to try new flavours.

When I shared the photo above on Twitter, Facebook and Instagram I had loads of people ask where they can get the pan. Unfortunately, Lakeland is no longer stocking it. The pan is made by an American company called Nordic Ware and I think you may be able to buy it on Amazon.
